State of Grace: the Homecoming Houston Deserved

Chef Ford Fry built an acclaimed restaurant empire in Atlanta, then did the thing ambitious Texans rarely do — he came home. State of Grace, his River Oaks return, cooks the Gulf Coast South the way memory insists it should taste: oysters on crushed ice, blue crab in beignets, and a room that hums like old Houston money having fun.

The Story

Fry grew up in Houston before making his name across Georgia’s dining scene; State of Grace opened in 2015 as his first restaurant in his hometown, with the kitchen led from day one by chef Bobby Matos. The menu draws on the Gulf, on Texas ranch country and on the city’s Creole and Mexican inflections — less a concept than an autobiography with a raw bar.

What to Order

Start at the oyster bar: a rotating cast of Gulf and coastal bivalves, icy or wood-roasted in chili butter. The blue crab beignets are the signature nobody skips, deviled eggs and Oysters Bienville nod to grandmother cooking, and mains swing from scallop crudo through Korean-fried chicken to duck carnitas — a map of Houston appetites on one page. The Grand Seafood Plateau makes celebrations official.

The Space

Handsome and clubby with a wink: warm wood, patterned tile, a tortoise-shell-toned bar, the oyster room glowing at the heart of it. It feels expensive but never solemn — River Oaks polish with the volume turned pleasantly up.
