This snug EaDo bistro — named, improbably, for a character in the original Mad Max — turned tinned-fish energy, natural wine and a plate of tiny pancakes into one of the most influential menus Houston has produced this century.

The Story

Chef Jason Vaughan, alumnus of Chicago’s Au Cheval and L2O, opened the restaurant in 2017 with restaurateur Michael Sambrooks and beverage veteran Sean Jensen. Within a year Bon Appétit ranked it among America’s best new restaurants, and James Beard semifinalist nods have kept arriving since — including for Outstanding Restaurant, the industry’s heavyweight category. The “hustle” in the name is the ethos: small room, big standards, zero complacency.

What to Order

Nancy Cakes first — always. The fluffy little corn pancakes arrive under whipped butter and a gleam of trout roe, a blini-and-caviar fantasy gone Texan. Beyond that, the menu shifts with the seasons: Gulf fish handled with unusual respect, vegetables given main-character treatment, a legendary burger lurking modestly at the bottom.
