The Story
The Pappas family has fed Houston for generations across a small empire of restaurants, but this steakhouse is the flagship — the place where the family’s obsession with doing things in-house reaches its logical extreme. Beef rests in dedicated aging rooms for weeks, some cuts far longer, developing the deep, nutty funk that separates serious steak from expensive steak. The wine program has held Wine Spectator’s Grand Award — the magazine’s top distinction — year after year since 2010.
What to Order
Dry-aged is the whole point: the bone-in ribeye and the porterhouse built for two show the aging program at full volume. Fried oysters make a canonical opener, the jumbo crab mac and cheese has ended more diets than any dish in the Galleria area, and the sommeliers genuinely enjoy matching bottles to budgets of every size — the cellar runs tens of thousands of bottles deep.
